Ingredients:

  • 2 large chicken breasts (about 12 ounces/340 grams)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed greens (such as spinach, arugula, and romaine)
  • 1 cup strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup sliced almonds
  • 1 avocado, diced

Dressing:

  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

  1. Cook the Chicken:
    • Preheat the oven to 375°F (190°C).
    • Season the chicken breasts with olive oil, salt, and pepper OR use my Herb Lemon Chicken recipe.
    • Place the chicken on a baking sheet and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
    • Let the chicken cool slightly, then slice it into strips or cubes.
  2. Prepare the Salad:
    • In a large bowl, combine the mixed greens, sliced strawberries, crumbled feta cheese, thinly sliced red onion, sliced almonds, and diced avocado.
    • Add the sliced or cubed chicken to the salad.
  3. Make the Dressing:
    • In a small bowl or jar, whisk together the balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper until well combined.
  4. Assemble the Salad:
    • Drizzle the dressing over the salad and toss gently to combine.
    • Serve immediately.
