Better Than Take-Out Series – Ginger Beef Stir Fry

This spicy chili-ginger beef stir fry is quick, bold, and perfect for meal prep. Juicy beef, crisp veggies, and a zesty chili-ginger sauce come together in under 30 minutes. Because this recipe uses lean ground beef so it’s cost effective and quick for a busy week day dinner.


What you need:

  • 1 lb lean ground beef (or thinly sliced flank steak)
  • 2 carrots, thinly sliced
  • 2 celery stalks, thinly sliced
  • ½ red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 cups broccoli florets (or 1 steamer bag of broccoli)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely chopped
  • 1 tablespoon butter
  • 1 teaspoon sesame oil
  • 2 tablespoons brown sugar (or honey)
  • 1 tablespoon chili garlic paste
  • 1 teaspoon rice wine vinegar
  • 1 tablespoon soy sauce
  • Pinch of salt

Directions:

  1. Thinly slice the onion, celery, bell pepper, and carrots. Chop ginger and mince garlic. If using a steamer bag of broccoli, cook according to package instructions.
  2. Heat a large skillet or wok over medium-high heat. Add the butter and sesame oil. Once hot, add the beef. Season lightly with salt and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  3. Add carrots, celery, onion, and red bell pepper. Stir in brown sugar and chili garlic paste. Cook for 3–5 minutes until veggies begin to soften.
  4. Add garlic, ginger, and broccoli (steamed if using a steamer bag). Finish with rice wine vinegar and soy sauce (adjust to taste). Cook another 2–3 minutes until everything is glossy and coated.
  5. Serve hot over white rice, brown rice, or cauliflower rice for a lighter option.

Optional Garnish: Fresh cilantro, crushed peanuts, or sesame seeds.
