Sheet Pan Nachos with Homemade Taco Beef

If you love tacos but want something shareable and easy, these Sheet Pan Nachos are your answer. They’re layered with crispy tortilla chips, homemade seasoned ground beef, and your favorite toppings for a high-protein spin on classic nachos.

This version skips the heavy restaurant-style grease and uses lean ground beef seasoned with a homemade taco blend — cumin, garlic powder, paprika, and achiote paste for that deep, savory flavor. They’re perfect for family dinners, game nights, or a fun weekend meal prep idea that feels like a treat but fits your goals.


Ingredients

For the beef

  • 1 lb lean ground beef (90/10 or 93/7)
  • 1 tbsp olive oil (optional if using very lean beef)
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika (smoked optional)
  • 1 tsp chili powder (optional for spice)
  • 1 tbsp achiote paste (dissolved in 1–2 tbsp warm water)
  • Salt and pepper to taste
  • Juice of ½ lime

For the nachos

  • 1 bag (about 8 oz) baked or regular tortilla chips
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 cup shredded Mexican blend or cheddar cheese
  • ½ cup diced tomatoes or pico de gallo
  • 1 avocado, diced
  • Fresh cilantro, chopped
  • Optional toppings: Greek yogurt or sour cream, salsa, jalapeño slices, lime wedges

Instructions

Step 1: Preheat oven
Preheat your oven to 400°F and line a large baking sheet with parchment paper or foil for easy cleanup.

Step 2: Cook the beef
Heat a skillet over medium-high heat. Add olive oil (if needed), then ground beef. Cook, breaking it apart, until browned. Add cumin, garlic powder, paprika, and chili powder. Stir to coat.

Dissolve the achiote paste in warm water and pour into the beef. Simmer 2–3 minutes, then add salt, pepper, and lime juice. Remove from heat.

Step 3: Assemble nachos
Spread chips evenly across the baking sheet. Layer with half the cheese, then spoon the seasoned beef evenly over the top. Add black beans, corn, and diced peppers. Sprinkle remaining cheese on top.

Step 4: Bake
Bake for 8–10 minutes, or until cheese is melted and bubbly.

Step 5: Add toppings
Remove from oven and top with tomatoes, avocado, cilantro, and any extra toppings you love. Serve immediately.
