This Italian White Bean Salad makes for a great lunch. Packed with fiber and protein and completely satisfying in every way. This recipe is a great meal prep item for easy grab-and-go meals. Pair this recipe with a bed of arugula or on top of mixed greens for a hearty lunch or side with dinner.
Ingredients:
- 1 can Cannellini Beans
- 1/2 cup fresh grated parmesan
- 1 scallion chopped
- 1/4 cup sundried tomatoes chopped
- 1 small red bell pepper diced and lightly sautéed
- 3 tbs chopped fresh parsley
- 3 tbs pancetta cooked
- 1 tbs olive oil
- 1/2 tbs balsamic vinegar
- 1/2 tbs fresh lemon juice
- Salt, pepper, red chili flakes
Strain cannellini beans, rinse, set aside. Prepare pancetta so it’s crispy and remove from pan. Place pancetta on a paper towel to drain out excess fat. Saute finely chopped red bell pepper. Finely chop a scallion, sun-dried tomato, and parsley. In a large bowl combine remaining ingredients, toss and serve.
Serve on it’s own or on a bed of arugula or mixed greens. Italian White Bean Salad is sure to be a family favorite!
