Do you have a flavor that just tastes good deep in your soul?
That is this soup for me. This soup is the perfect quick week night dinner that is satisfying and simple. Whenever I make this soup my husband does a happy dance with each bite.
What you need:
- 1lb chicken breast
- 2 onions
- 2 garlic cloves
- 2 cans fire roasted tomatoes
- 1 jalapeno
- 1 can black beans
- 2 tsp Dried Oregano
- 1 tbs Extra Virgin Olive Oil
- 1 cup frozen corn
- ½ cup fresh cilantro *garnish
- Shredded Mexican cheese *garnish
- Avocado *garnish
Instructions:
Place 1lb of boneless skinless chicken breast in a heavy bottomed large pot
Add in 5 cups of water, 2 tbs salt, 1 onion peeled and quartered, 2 cloves garlic peeled
Bring to a rolling boil, reduce to medium then simmer for 5 min.
Strain broth in to a large bowl set aside
Remove onion and garlic from chicken
Shred chicken, set aside
Add 1 tbs extra virgin olive oil to the heavy bottomed pot, heat to medium high
Add 1 chopped and seeded jalapeno, 1 chopped onion, 2 cans of fire roasted tomato and 1 tsp dried oregano, 1 tsp salt.
Saute until onions are translucent
Pour in the broth, then add the shredded chicken
Rise and strain 1 can black beans, add to the pot
Add 1 cup frozen corn
¼ cup chopped fresh cilantro
Simmer for 15 min, finishing with seasoning 1 tsp oregano & salt to taste
Serve with fresh cilantro, shredded cheese, crumbled tortilla chip and cubed avocado
