Oat flour waffle with berries and almond butter

OAT FLOUR PROTEIN WAFFLES

Start your day off right with these protein packed waffles. This waffles swaps the regular butter or oil in normal waffles with Greek yogurt. Add berries or chocolate chips! These can also be frozen for a quick breakfast.

This recipe makes 6-8 waffles depending on the iron, and can also be made as pancakes!

You will need:

  • 2 eggs
  • 2 tbs Greek Yogurt
  • 1 1/2 cup Unsweetened Almond Milk
  • 2 Cups Oat Flour
  • 2 Scoops protein powder
  • 1 tbs baking powder
  • 1 tsp vanilla extract
  • 2 tbs. organic sugar or sugar substitute
  • Non-stick cooking spray

In a large bowl, Beat until well mixed:

  • 2-Eggs
  • 1 1/2 Cups Almond Milk
  • 2 tbs greek yogurt

In a medium bowl sift together:

  • 2 Cups Oat Flour
  • 2 Scoops Vanilla Protein Powder
  • 1 tbs baking powder

Add dry ingredients to wet and mix well.

Then mix in:

  • 1tsp vanilla extract
  • 2 tbs Sugar (sub stevia or coconut sugar)

Preheat waffle iron to medium high heat, spray with non stick cooking spray. Pour batter on to iron and cook until golden. Serve warm.

Store Batter for up to 4 days in the refrigerator. Or cook and store in the freezer then toast.
