Sheet pan dinners are versatile and can be modified according to what you have on hand or family favorites. Chicken apple sausage paired with sweet potato, mushrooms, and fennel make this dish perfect for a chilly fall evening. This recipe can be changed or adapted according to whatever vegetables you have on hand.
To make this recipe super quick on a weeknight you can chop and prep the vegetables ahead of time so you can dump them on the baking sheet and go. While this recipe does require a bit of prep and chopping, I would categorize it as a passive cooking recipe. You don’t have to stir constantly or stand over the stove. Once the prep is done you can move on with your life.

Ingredients
Chicken Apple Sausage – 12 ounces – Scored
2 Medium sweet potatoes – peeled and cubed
1 Fennel Bulb – sliced 1/4 inch thick
Bella Mushrooms – 10 oz – sliced 1/4 inch thick
10 Radishes – scrubbed and halved
10 Fresh Sage leaves
3 celery stalks – Sliced 1/4 inch thick
1 Large Yellow Onion – Sliced 1/4 inch thick
2 tbsp – Extra Virgin Olive Oil
Salt & Pepper To Taste
1 Tsp – Paprika
Directions
- Preheat your oven to 425 and adjust rack to the top
- Wash and cut the vegetables
- Score cut the sausage
- Line baking sheet with parchment paper
- Toss ingredients in olive oil and place in a single layer on a sheet pan
- Season with salt, pepper and paprika
- Roast for 18-20 minutes or until sausage is cooked and vegetables are tender
- Serve with whole grain or dijon mustard
